Ingredients: One large baking potato per person One large red onion salt pepper butter sour cream chives Bacon bits (for those who want to be bad)

Directions: |
Directions:wash your large baking potato with a scrub brush. Leave the skin on,(it's where all the good for you stuff is)
Once clean take a knife and slice the potato almost through but not quite. Half inch silce is nice. Place sliced onions in between the potato slices. The onion slices are about a quarter inch thick. Red onions are large so the onion slices are usually halved to fit.
wrap in aluminum foil shiny side toward the potato.
1 hour on the grill with a couple turns along the way.
serve straight to the plate with salt/pepper and the other bits left to the individuals. |

Notes: I learned this receipe from an old boss, Stuart. He made it with steak, I prefer to make it with the Beer Can chicken as it times well and the space on the Barbeque works perfectly.
