6 eggs, separated
1 T. flour
1/4 tsp. salt
1/4 tsp. pepper
1 can (4 oz.) California green chilies, seeded & rinsed
1/2 pound mild Cheddar or jack cheese, sliced
Canned or bottled green chile salsa o

Directions:
Directions:
Beat egg whites until stiff. Mix flour, salt, and pepper with egg yolks; then fold in beaten egg whites & pour half of this mixture into a greased 2 x 9 x 13 baking dish.
Slit each chile lengthwise down one side & lay flat over egg batter & then cover with cheese slices. Pour rest of egg mixture over cheese. Bake 25 min. in a 325º oven. Cut in 3-inch squares & serve with salsa, if desired.
