3 #'s chicken (favorite parts)
1/3 c. flour
1 1/2 tsp. salt
1 tsp. dried marjoram leaves
1/4 c. butter
2 medium onions, sliced
1 c. chopped celery
26 small carrots
1 bay leaf
4 whole cloves
9 whole black peppers
1 can (13 3/4 oz.) chicken broth
1/2 c. light cream

Combine flour with salt & marjoram; mix well in a zip lock bag. (Reserve about 2 T.) In 2 T. hot butter in 6-qt. Dutch oven, saute' chicken, turning with tongs, until lightly browned all over (about 15 min.) Remove to plate. To drippings, add onion, celery, carrots, bay leaf, cloves, and black peppers. Saute, stirring. 5 min. Stir in broth & 1 c. water; bring to boiling. Return chicken to Dutch oven. Bring to boiling; reduce heat; simmer, covered, 40 min. In small bowl, combine reserved flour mixture (see Step 1) with the light cream, stirring until smooth.
Stir flour mixture gently into fricassee; simmer 5 min. or until mixture is thickened. Replace dumplings on top of fricassee to serve. Before serving, sprinkle with more chives or parsley.
