Ingredients: 1 tbsp olive oil 1 lb italian sausage, casings removed 2 onions, minced 2 carrots, peeled and cut into 1/4" pieces 1 celery rib, minced 6 garlic cloves, minced 1 tbsp fresh oregano or 1 tsp dried 1/3 cup all purpose flour 1/2 cup dry white wine 5 cups low sodium chicken broth 3/4 cup lentils du Puy or brown lentils, picked over and rinsed 9 1/4 ounces) 2 bay leaves 1 lb Swiss chard, stemmed,sliced half inch thick

Directions:1. Heat oil over medium high heat until just smoking, brown sausage well, breaking up large pieces with wooden spoon, about 5 minutes;transfer to slow cooker, save 2 tbsp fat in skillet 2. Add onions, carrots, celery, garlic and oregano to fat in skillet and cool until veggies are soft. Stir in flour, cook 1 minute. slowly whisk in wine scraping up any browned bits. Transfer to slow cooker. 3. Stir broth, lentils and bay leaves into slow cooker. Cover and cook until lentils are tender, 9 to 11 hours on low or 5-7 on high. 4. Stir in chard, cover and cook on high until tender, 20-30 minutes. Season with salt and pepper. let sauce sit for 5 minutes and remove fat from surface using spoon. Discard bay leaves. Serve over capelleti pasta. |
