3 eggs, 2 cups sugar, 1 and 1/2 cups of light oil,
3 cups flour, 2 tsp. baking soda, 1 tsp. salt, 2 tsp cinnamon, 2 tsp vanilla, 1 and 1/2 cups of grated carrots, 1 cup pecans, 1 - 20oz. can crushed pineapple (drained,)

Beat together the 3 eggs, 2 cups sugar, and 1 and 1/2 cups of light oil, then add 3 cups flour, 2 tsp. baking soda, 1 tsp. salt, 2 tsp cinnamon, 2 tsp vanilla, 1 and 1/2 cups of grated carrots, 1 cup pecans, and 1 - 20oz. can crushed pineapple (drained,)
Bake in 10" tube pan for 1 hour and 15 minutes.
(make sure to use the 10" tube pan or your cake will not cook right)

Cream Cheese Frosting

Beat 1/2 cup soft butter, 1 - 8oz package cream cheese, 2 tsp vanilla, 1 box (16 oz) powdered sugar and frost the cake when cooled,
