1 lb medium cheddar cheese
8 oz cream cheese
4 oz diced pimientos
4 oz diced green chilies
1 tsp garlic powder
1/2 tsp salt
1/8 tsp white pepper (black will work)
4-5 dashes Franks Hot Sauce (or other Louisiana style)
splash red wine vinegar
chili powder (garnish)
chopped nuts (optional)

Directions:
Directions:
Leave cheese out overnight to bring to room temperature. Cut cheese into cubes and combine in food processor. Pulse to combine. Add remaining ingredients. Pulse to combine then low to blend.

For spread, put in bowl and sprinkle with chili powder.
For cheese ball, roll in chopped nuts (pecans or almonds).

Best made 24 hours in advance to let flavors meld. Serve at room temperature with chips and veggies.
