1 cup unsalted almond butter
3/4 cup sucanant (raw evaporated cane juice)
1 large egg
1/2 tsp baking soda
1/4 tsp sea salt

options:
1) 1/2 cup dried cranberries; 1/2 cup unsweetened coconut shreds
or
2) 1/2 cup cocoa powder; 1/2 cup unsweetened coconut shreds

Directions:
Directions:
Mix altogether with one variation of options. Roll into a log using wax paper and chill. Slice and bake at 350º for 10-12 minutes. Makes 24 cookies.

I always double this recipe and use 3 eggs instead of two. This makes the chocolate ones like brownies.
