2 boneless chicken breasts
olive oil
grill seasoning (steak)
1 large onion, chopped
3 - 4 ribs celery, chopped
3 - 4 carrots, peeled and chopped
2 - 3 cloves garlic, minced
1 - 2 tbsp Italian Herbs
2 bags frozen mixed vegetables (I like a soup mix with a bag of green beans) optional - substitute one bag with fresh chopped kale
14.5 oz can diced tomatoes (no salt added)
15 oz can tomato sauce (no salt added)
1/2 cup lentils
2 - 32 oz boxes chicken broth

Coat chicken with olive oil and grill seasoning. Bake at 400º for 25 minutes. Remove and let cool. Chop and set aside.

In a large dutch oven or soup pot, saute onions, celery and carrots in olive oil (enough to cover bottom of the pan). Add garlic and herbs and stir. Add frozen veggies and stir until they begin to defrost. Add chicken and remaining ingredients. Bring to a boil, reduce heat. Cover and simmer 30 minutes.
