Zucchini, cut into bite-size pieces,
Onion, chopped fine,
Peeled Fresh Tomatoes, chopped,
Basil,
Parsley,
Garlic,
Salt,
Pepper,
Chicken Bouillon Cubes (optional – Mom did not use)

Directions:
Directions:
Sauté onion and garlic in olive oil till garlic lightly browned.
Add peeled and cubed zucchini, tomatoes (chopped).
Cover with water, add seasonings to taste along with a 2-3 chicken bouillon cubes for seasoning if you like. Remember, the original recipe was vegetarian so chicken bouillon cubes will alter the fresh flavors or the zucchini.
Watch for the salt as the bouillon has a lot of sodium.
Cook medium to low heat in a covered saucepan until tender and yummy...about 45 minutes.

Serve hot with a dollop of Ricotta cheese in the center and lots of good grated Reggiano-Parmesano cheese.
