1 1/4 c. walnut halves, divided
1/4 c. pure maple syrup
1 1/2 cups bottled Italian dressing
2 T fresh parsley
1/4 c sugar
12 cups lightly packed field greens (or mixed greens of your choice)
2 ripe pears, halved, cored and sliced
3/4 c. crumbled blue cheese

Preheat oven to 350. In oven proof dish, combine 3/4 cup walnuts with maple syrup, stirring to coat. Bake for 10 minutes. Remove from oven and immediately spread on a sheet of foil to cool.
In food processor, combine remaining 1/2 cup walnuts, dressing, parsley and sugar. Blend until creamy. Chill.
To serve, divide the greens among plates. Arrange pear slices over greens, using 1/2 pear per plate. Top with 2 T. blue cheese and 2 T. candied walnuts per plate. Drizzle with salad dressing and serve.

This recipe is from one of our favorite local restaurants here in Roswell, GA. We can actually walk there from our house and quite often do! You can add some slice grilled chicken to this salad and turn it into a main course.
