Ingredients:

4 c. sugar
7 c. flour
4 eggs (beaten)
1 c. nuts
1/2 t. cinnamon
1 t. lemon or orange zest
1 t. salt
2 c. shortening
2 t. baking soda
1 #2 can crushed pineapple (approx. 2-1/2 C. or a 20 oz. can)
2 t. vanilla
24 oz. chips (chocolate, wht. choc., butterscotch, PB or strawberry)

Directions:

Mix all ingredients together and chill dough for 1 hour. Drop onto cookie sheet and bake for 10-12 minutes at 375º.

1 3/4 c applesauce can be substituted for pineapple.
