1/2 C. melted butter
3 large beaten eggs
1 - 17 oz can cream style corn
1 - 16 oz can whole kernel corn or
1 C. frozen corn
1 package of dry onion soup mix
1/8 tsp. pepper
1 box Jiffy corn muffin mix

Directions:
Directions:
Heat oven to 350º. Brush shallow 2.5 quart casserole with some of the melted butter or use a spray oil.

In a large bowl, mix eggs, remaining butter and corns thoroughly. Stir in onion soup and pepper. Add Jiffy mix and stir well.

Pour in dish and bake approximately 40 minutes or until toothpick comes out clean.

This was a huge hit with friends and family. So easy and quick. I would categorize it more as a stuffing than a vegetable or bread. Cruise the internet for variations that include sour cream, green chili, cheddar cheese.
