CAKE~
2 c. flour
2 c. sugar
2 t. baking soda
1 t. salt
1 1/2 c. cooking oil (vegetable or canola)
4 eggs
3 C. shredded carrots
1 c. raisins

ICING~
1- 8 oz. pkg. cream cheese
1 box powdered sugar
1/2 c. raisins (optional)
1 c. butter
1 c. nuts
2 t. vanilla

Mix all CAKE ingredients together and bake in 2-8" layer pans...40 min. at 350º

Mix together all ICING ingredients and frost cake when cool; Frost top of 1st layer; stack 2nd layer and cover outside completely; making a two layer cake.
