Nonstick cooking spray
2 tsp baking powder
1/2 tsp salt
3 cups cake flour (not self rising)
1 1/2 cups plus 2 Tbs sugar
1/2 cup light corn-oil spread
1/2 cup low fat milk
1 Tbs vanilla extract
1 large egg
1 1/2 cups blueberries
2 Tbs fresh lemon juice

1 Preheat oven to 350º Grease (" by 5" loaf pan with non stick cooking spray.

2 In large bowl, mix baking powder, salt, cake flour, and 1 1/2 cups sugar. With pastry blender or two knives used scissor-fashion, cut in corn-oil spread until mixture resembles fine crumbs. Stir in milk, vanilla, and egg until flour is just moistened. Gently stir in blueberries spoon batter into loaf pan.

3 Bake loaf 1 hour and 20 minutes or until toothpick inserted in center comes out clean. Cool loaf in pan on wire rack 10 minutes; remove from pan.

4 With skewer, prick top of warm loaf in many places. In cup, mix lemon juice and remaining 2 Tbls sugar. With pastry brush, brush top of warm loaf with lemon glaze. Cool on wire rack.
