1- 5.5 oz box dry hash browns with onion
1/8 t pepper
4 T margarine
2 c milk
¼ c flour
1 c sour cream
½ t salt
8 slices Canadian bacon or tender ham
8 eggs
2 T parsley, snipped

Directions:
Directions:
**Prepare hash browns according to package; set aside. In saucepan, melt margarine; blend in flour, salt and pepper. Add milk; cook and stir until thick and bubbly. Remove from heat and stir in sour cream, parsley and hash browns. Pour into 9x13” pan. Arrange bacon in rows down center, overlapping slightly. Bake uncovered at 350 for 20 minutes.
**Remove from oven; make deep depression in bacon slices. Slip one egg into each depression. Season with salt and pepper; return to oven and bake 10-12 minutes longer or until eggs are set.
