2 c vinegar
1 t whole cloves
2 c sugar
1 t allspice
1 t whole pepper
5 bay leaves
1 t mustard seed

Directions:
Directions:
Wash smelt well and cut as for herring. Soak 24 hours in clear, cold water. Soak another 48 hours in salt brine to hold an egg (enough salt to hold up an un-cracked egg.) Soaked 24 hours in white vinegar. Cook brine 10 minutes. Add 2 cups lemon juice, sliced onions and half lemon, cut up fine. Ready to eat in 5 days. Refrigerate.
