1 gal cleaned fish

Directions:
Put in salt water strong enough to float an egg. Store in cool place for 48 hours.
**Drain salt water well, then cover with white vinegar. Store in cool place for 24 hours.
**Drain well then take 4 cups fresh white vinegar and bring to boil and add 3 cups sugar and stir well. Let set until cooled.
**Add ¼ cup whole pickling spices and 1 cup of sweet wine. Silven satin wine, pour over fish with layers of white onions. Cover completely with brine.
