6 white onions, sliced thin
1 c milk
3 eggs ,beaten
salt to taste
2 c pancake mix

Directions:
Directions:
Combine milk, eggs and salt in mixing bowl.
Soak the onions in this mixture for about 30 min.
Heat oil for frying in heavy skillet to 375º.
Romove onions from milk mixture, dip in batter and place in hot oil.
Fry rings till golden brown.
Transfer to a plate lined with paper towels to drain.
Pack fried onion rings solidly, but loosely, without pressing too hard, into an 8 by 4 in. loaf pan.
Bake at 400º F for 10 to 15 min.
Turn out onto serving plate.
