1 pastry pie shell
1 15oz can pumpkin
1/2 c. sugar
1 tsp. ground cinnamon
1/2 tsp. ground ginger
1/4 tsp ground nutmeg
2 slightly beaten eggs
3/4 c. half and half or milk

Directions:
Directions:
Prepare and roll out pastry for a single crust pie. Line a 9 inch pie plate with the pastry crust.
For filling, in a medium bowl combine pumpkin, sugar, cinnamon, ginger and nutmeg. Add eggs, beat lightly with a fork just until combined. Gradually add half and half stir until combined.
Place the pastry lined pie plate on the oven rack. Carefully pour filling into the pastry shell.
To prevent over browning, cover edge of the pie with foil. Bake in a 375º oven for 25 minutes. Remove foil. Bake about 25 minutes more until a knife inserted near center comes out clean. Cool, cover and refrigerate within two hours.
