8-10 chicken breasts (bone in, skin on) cut in half
(I like to add thighs too)
2 tsp. Minced garlic
¼ cup. Dried oregano
Salt and pepper to taste
½ cup red wine vinegar
½ cup olive oil
1 cup pitted prunes
½ cup pitted green olives
½ cup capers with juice
6 bay leaves 1 cup white wine

1 cup brown sugar
¼ cup parsley for garnish (1/8 cup if using dried parsley)

Directions:
Directions:
In a bowl or freezer bag combine chicken, garlic, oregano, salt, pepper, vinegar, olive oil, white wine, prunes, olives, capers and juice and bay leaves. Cover or zip closed and marinate in fridge overnight.

Heat over to 350 degrees. Arrange chicken in single layer and spoon over marinade. Sprinkle chicken with brown sugar. Bake for 1 hour to 1 1/4 hours basting frequently.

Transfer chicken, prunes, olives and capers to dish. Juice is good over mashed potatoes.
