2 tablespoons butter, divided
1 cup finely chopped onion
1/2 cup finely chopped celery
1/2 cup chopped green bell pepper
1/2 pound chicken livers
1 pound ground pork
1 teaspoon Italian seasoning
1 teaspoon Cajun seasoning
1/2 teaspoon salt
1/2 teaspoon ground black pepper
5 cups hot cooked rice

1. In a large skillet, heat 1 tablespoon butter over medium-high heat. Add onion, celery, and bell pepper: cook stirring occasionally, for 10 minutes or until vegetables are tender. Transfer vegetables to a large bowl.

2.In the work bowl of a food processor, place chicken livers: pulse 6 times or until finely chopped.

3.In same skillet, heat remaining 1 tablespoon butter over medium-high heat. Add chopped livers, ground pork, Italian seasoning, Cajun seasoning, salt, and pepper. Cook for 15 minutes or until sausage is browned and crumbly and liver is done. Add vegetables in bowl. Stir in cooked rice.
