2 lb. beef short ribs
3 Tbsp. flour
2 Tbsp. shortening
2 tsp. salt
1/8 tsp. pepper
1 small onion, minced
2 medium carrots, diced
1/2 cup celery, diced
1/2 green pepper, opt.

Directions:
Directions:
Cut ribs into small pieces, coat with flour. Brown slowly on all sides in a heavy skillet or Dutch oven for about 10 minutes. Add seasonings, minced onion and 2 cups water.
Cover tightly and simmer for 2 hours, adding water if necessary. Add vegetables and continue cooking 30-40 minutes.
Remove meat and vegetables to platter. Thicken juice with 1 Tbsp. flour stirred into 1/2 cup water.
