2 T. vegetable oil
1 large onion
1 1/2 lbs. ground beef
1/2 c. flour
1 1/2 t. dried thyme
2 c. water
1 T. browning sauce (Kitchen Bouquet)
2 beef bouillon cubes
1 T. Worcestershire sauce
2 1/4 lbs. red potatoes (7-8), peeled
1/8 t. nutmeg
1/4 c. heavy cream
1 egg yolk (or whole egg, if desired)
1/2 stick (4 T.) butter
1 1/2 t. salt
1/8 t. ground white (or black) pepper
1 c. grated cheddar cheese

1. Heat oil in a large saucepan and saute onions, (5-6 min.)
Add ground beef and cook until no longer pink, about 5-6 minutes. Stir in flour, thyme, water, seasoning sauce, bouillons cubes and Worcestershire sauce.

2. Reduce heat; simmer until sauce thickens and meat is fork-tender, 35-40 minutes. Remove pan from stove and transfer beef to earthenware dish. Reserve liquid.

3.Preheat oven to 350º. Place potatoes in a large pot and cover with cold water. Cover pot and bring to a boil. Lower heat; simmer until tender, 20-25 minutes. Drain potatoes and mash them.

4. Combine nutmeg, cream and egg with butter, salt and pepper. Mix into mashed potatoes. Pipe potatoes over meat using a pastry bag.
Sprinkle with cheese, bake until potatoes are golden brown, 30-35 minutes. Serve with warmed sauce. 4 Servings

Suggested additions: mixed vegetables put in with meat before putting in the oven. Also you can use instant potatoes over the top instead of mashed.
Be sure to brown the top of the potatoes to form a firm crust.
