5 lb. boneless pork loin
1 1/2 cups dry red wine
2/3 cup brown sugar
1/2 cup vinegar
1/2 cup catsup
1/2 cup water
1/4 cup vegetable oil
2 Tbsp. soy sauce
2 garlic cloves, minced
2 tsp. curry powder
1 tsp. ginger
1/2 tsp. pepper
2 Tbsp. cornstarch

Directions:
Directions:
Place roast in a large plastic bag in large deep bowl. Mix all ingredients for marinade except for cornstarch. Pour marinade over roast, close bag and refrigerate 6-8 hours or overnight.

Drain meat, reserving marinade in the fridge. Place meat on rack in shallow roasting pan. Roast at 325 for 2 1/4 - 2 1/2 hours or until 145 degrees. About 25 minutes before meat is done, make sauce by mixing cornstarch with marinade and cook until thickened and bubbly. Cook 2 minutes. Brush roast frequently with sauce last 15 minutes of baking.

Let meat stand 15 minutes before slicing. Reheat remaining sauce to boiling and pass with meat.
