2 tart apples, peeled, cored & diced in 1/4" dice
1 firm-ripe pear peeled, cored & diced in 1/4" dice
1 cup dried currants
1/2 cup chopped pitted dates
1//2 cup chopped dried figs
1/2 cup golden raisins
6 gingersnap cookies, coarsely crushed, (1/2 cup)
2 T. finely grated fresh orange zest
1/4 cup fresh orange juice
1 T. fresh lemon juice
1 cup packed brown sugar
1/4 cup brandy
1 T. dry white wine
1 t. cinnamon
3/4 t. salt
1/2 t.. ground allspice
1/8 t. ground cloves

Directions:
Directions:
Stir together all the filling ingredients in a large bowl and let stand at room temperature, stirring occasionally, at least 1 hour for flavors to develop.

Preheat oven to 450º.

Place mincemeat in pie crust. Top with lattice crust.. Bake pie 15 minutes, then reduce oven temperature to 350º and bake until filling is bubbling and crust is golden. Cool pie completely on rack.
