15 1/2 ounces red salmon
1 lb. rotini pasta
2 cups carrots, thinly slices
2 cups celery, thinly sliced
1/3 cup ripe olives, sliced
3 green onions, chopped
1/4 medium red onion, thinly sliced
1/4 large red bell pepper, thinly sliced
1/3 cup red wine vinegar
1/8 cup vegetable oil
1 tablespoon virgin olive oil
1/2 teaspoon sugar
1/2 teaspoon crushed dried oregano leaves
1/2 teaspoon salt
1/8 teaspoon pepper

Cook pasta according to box and chill. Rinse and remove skin, bones and other tissue from salmon, then break into medium sized pieces. Mix together salmon, pasta, cucumbers, celery, olives, onions and bell pepper. In separate bowl, combine vinegar, oils, sugar, oregano, salt, and pepper and mix well. Pour over salmon mixture, tossing carefully to coat. Serve immediately, or cover, chill and serve later.

This recipe is from my daughter, Suzi Angel. She said she used cucumbers instead of carrots, because her family doesn't like carrots in salad. She also used all olive oil instead of some vegetable oil, green olives instead of black, left out the sugar and added the red onion.
