1 large onion, coarsely chopped
1 bell pepper, chopped
1 clove garlic, finely chopped
2 Tbsp vegetable oil
2 lbs Garlic Turkey Sausage, broken into small pieces
1 can (28oz) crushed tomatoes
1/2 cup dry red wine
1 tsp leaf basil, crumbled
1 tsp thyme
1 tsp dried parsley flakes
1/2 tsp salt
1/2 tsp pepper
1 lb ziti, cooked and drained
1/4 cup grated Romano cheese
1/2 cup shredded mozzarella cheese

Directions:
Preheat oven to 375º
Saute onion, green pepper and garlic in oil in a large saucepan or skillet until tender, about 3 minutes. Add sausage. Saute until meat is lightly browned. Add tomatoes, wine, basil, thyme, parsley, salt and pepper. Bring to a boil. Lower heat, partially cover, simmer 30 minutes, stirring occasionally.
Grease 14x11 1/2 x 2 1/4" baking pan
Combine tomato sauce, ziti, Romano cheese and 1/2 mozzarella in a large bowl. Turn into prepared pan and sprinkle with remaining mozzarella.
Bake 20 minutes. Let stand 5 minutes before serving.
