1 Tbsp. olive oil
3 cans (14.5) seasoned diced tomatoes (garlic, onion, basil) undrained
1 cup chopped onion
1 green bell pepper, chopped
3 cups herb seasoned stuffing mix (Peppridge Farm in a bag)
3 Tbsp. light brown sugar
2 tsp. Cajun seasoning
1 tsp. salt
1 tsp. garlic powder
1/2 tsp. black pepper (about 16 turns of the grinder)

Directions:
Saute chopped onion and bell pepper in olive oil until tender, Transfer to large mixing bowl and add tomatoes, stuffing mix, brown sugar, cajun seasoning, salt, pepper, garlic powder and 2 cups of the shredded cheddar cheese. Mix well. Place into a 9 x 13 inch pan top with remaining cup of cheese. Bake at 350 for 20 minutes.
