Ingredients: Your favorite frozen dumplings
The sauce (for 1 person; to be increased as necessary): 1 tbsp finely chopped garlic 1 tbsp finely minces Szechwan preserved vegetable 1 tbsp hot oil 1/4 tsp sugar 1 tbsp light soy sauce 1 tsp red wine vinegar
The garnish: 1 tbsp chopped cilantro 1 tsp minced preserved vegetable (optional)

Directions:Use a heavy pan that can hold all your dumplings. Heat 2-3 tbsp of peanut oil until it begins to shimmer. Add the dumplings and cook on medium high heat for 3-4 minutes and the bottoms are brown.
Add 3 tbsp water to the pan and immediately cover. Lower to the heat to medium low and cook 8 to 10 minutes.
For the sauce, simply combine all the ingredients and stir to blend. The sauce can be made ahead of time and kept at room temperature.
I like to make small plates with 2 to 3 dumplings per person served hot on top of the sauce. |
