8 cups Roma tomatoes, halved (with skins)
1/4 c. sugar (or less)
2 T. salt
1/4 c. olive oil
1 T. pepper (less or optional)
1/4 c. chopped garlic

Directions:
Directions:
Preheat oven to 375º
Mix all ingredients. Spread in baking dish (I use 9 x 13). Roast 15-20 minutes. Then slightly mash in dish. Return to oven for 15-25 minutes more. Serve on bruschetta bread.

This is a favorite for using an overabundant tomato harvest from the garden. It is fine warmed-up later.
