Sweet Potato Biscuits Recipe

2 c. whole wheat pastry flour
2 T. sugar (or your choice of sweetener
1 1/2 T. baking powder
1/2 t. salt
1/4 t. cinnamon
1/8 t. nutmeg
1/2 c. margarine
2 c. mashed sweet potatos
7-8 T. soy or almond milk

Preheat oven to 425º
Mash sweet potatoes (I often used canned). Mix with milk. Add to dry ingredients, mixing with hands (it's more fun that way). Roll dough on lightly floured surface to about 1/2" thickness. Cut with biscuit cutter. I like to use parchment paper on the baking sheet to avoid browning bottom too much. Bake for about 10-12 minutes. These are great served for breakfast with pure maple syrup! Or you may use them with any meal as with regular biscuits.
