1-1/4 lb. green beans, trimmed
1-1/4 lb. cherry or grape tomatoes, quartered
1 tsp oregano
1TBL minced shallots
2TBL red wine vinegar
2-1/2 tsp olive oil
salt/pepper to taste (I don't use salt)

Directions:
Directions:
Cook beans in boiling water for 7 minutes. Drain. Place beans, tomatoes, and oregano in bowl, and toss gently.
Combine shallots and vinegar, stir until mixed. Let stand for 10 min or so. Add oil, pepper to mixture until blended.
Pour vinaigrette over bean mixture, toss well.
