1 1/2 C. egg whites (appx.12 eggs)
1 7/8 C. of white sugar
1 1/2 C. cake flour
3/8 tsp. salt
1 1/2 tsp cream of tartar
1 tsp. vanilla
1/2 tsp. almond extract

Directions:
Directions:
sift flour 4 times add salt to egg whites and beat until foamy. Sprinkle cream of tater over egg whites and continue beating until stiff but not dry. Fold in sugar 2 Tbsp at a time. Add flavoring before last of sugar. Flour in flour a little at a time until all is used. Pour into un greased angle food cake pan. Bake @ 275º for 30 minutes then increase heat to 325º and continue baking for 35-40 minutes. Cool 1 hour before removing from pan.

invert cake pan on a bottle to cool a lemon juice bottle works well.
