Turkey (or chicken) Enchiladas Recipe

Ingredients: 1/2 cup chopped onion 1 can (4 oz) green chilies 3 tbsps butter, divided
1/3 cup salsa 1/8 tsp chili powder 1 cup sour cream - divided
3 cups cooked cubed turkey or chicken 2 cups shredded cheddar cheese - divided
1 cup chicken broth (I use the powdered variety) 2 - 3 tbsp flour
8 flour tortillas

Directions: |
Directions:In a glass bowl, combine the onions, 2 tbsps chilies and 1 tbsp butter. Microwave on high for 1 min. Add taco sauce, 1/4 cup sour cream and chili powder. Stir in turkey and 1/2 cup cheese. Divide the mixture among tortillas; place seam side down in a 13x9x2 inch baking dish
Melt the remaining 2 tbsps margarine over med heat until melted. Blend in flour then slowly add broth stirring constantly until thickened. Stir in remaining 3/4 cup sour cream and remaining chilies. Pour over enchiladas.
Bake in 325º oven for 40 - 45 min. Sprinkle remaining 1 1/2 cups cheese over top and return to oven until cheese is melted.
Serve with Salsa. |

Notes: If you like you can grease the dish. This will make the bottom of the tortillas crispy. I usually don't do this.
