12-14 Mission Large Corn Tortillas
1.5 lbs of Carne Asada or Flank Steak
Seasoning if Meat is not already marinated
12 oz or 1 1/2 C of Refried Black Beans
8 oz Cream Agria Mexican Style Sour Cream
2 Sweet Onions
1 Green Bell Pepper
1 Red Bell Pepper
1 Yellow Bell Pepper
1 ripe Avocado
1 tsp Lemon Juice
1 tsp Salsa Bravo or Taco Hot Sauce
1 T Regular Onion minced
1 T Mayonnaise

Holding large butcher knife almost horizontal to meat shave meat into thin slices. Marinate overnight in Fajita mix if Carne Asada is not already seasoned. Cut onions and bell peppers into thin slices. Make guacamole from avocado but cutting avocado in half, scooping out the green flesh and mashing it with lemon juice, salsa bravo, regular onion and mayonnaise. When you have all ingredients ready, microwave refried beans with just enough water for the beans to be spreadable. Set out Sour Cream. Heat tortillas one at a time in cast iron pan or on griddle that was wiped clean with oil for 30 seconds on the first side, turn, heat 60 seconds on the second side before returning them to the first side and heating another 30-60 seconds. Quickly heat meat in hot pan. When no longer pink remove meat from pan and add onions to remaining liquid and seasonings left from meat. Heat till soft. Remove to a bowl. Heat peppers in same fry pan after onions have been removed. Cook peppers until they begin to bend.

If you can not find already marinated Carne Asada, you can season your own by marinating meat overnight after it has been sliced and sprinkled with fajita mix. Place all toppings in decorative bowls for guests to build their own fajitas.
