1/2 lb. sweet sausage, casings removed
1 medium onion, diced
1 Tbsp. chopped garlic
1/4 lb. sliced mushrooms
2 C. heavy cream
2 oz. tomato sauce
1/2 C. grated Asiago cheese
1/2 bag loose leaf spinach
3 qts. water
1 lb. tortellini

Directions:
Directions:
Sauté sausage in a large skillet until browned, breaking up as it cooks. Remove sausage from the pan. Add onions, garlic and mushrooms to the liquid in the pan. Cook the liquid out, about 8-10 minutes over medium heat. Add the sausage back to the skillet. Add the cream and stir until it comes to a boil. Continue cooking over medium heat, stirring often, making sure nothing sticks to the pan. Reduce the sauce by one third. Add the tomato sauce and stir. Add the cheese and spinach and bring the sauce to a simmer. Stir until blended. Cook the tortellini in boiling water; drain. Pour the tortellini in a serving dish. Pour the sauce over the tortellini; mixing quickly to cover the pasta. Serve immediately.
