1 1/2 cups graham wafer crumbs
1/2 cup butter
1 1/2 cups white sugar
3 250g pkgs. cream cheese
6 eggs
2 cups sour cream
2 T. cornstarch
1 T. lemon juice
2 tsp. vanilla extract

Directions:
Directions:
Bring cream cheese to room temperature.
Preheat oven to 350ºF.
In a medium size bowl, mix graham crumbs and melted butter with a fork. Press mixture firmly on the bottom of a 10" x 2"spring form pan.
In a large bowl, beat cream cheese with a mixer at medium speed until smooth. Slowly beat in sugar.
With mixer at low speed, beat in eggs and remaining ingredients then beat for 3 minutes at medium speed.
Pour mixture into pan. Bake 1 hour. Turn off oven and leave in oven for 20-30 minutes. (less if it gets too brown) Remove and let cool in pan at room temp. for at least 1 hour. Cover and chill at least 2 hours.
To serve, remove side of pan and with a large spatula, loosen cake from pan bottom and slide onto a plate. Choose desired topping (kiwi, mandarin, cherry, etc) and spread over top. Enjoy!
