Directions:bone the chicken - put to the side cook noodles and drain- put to the side -white sauce- melt the margarine in saucepan, add the mixture of flour, salt, pepper and nutmeg-(I use a whisk) stir to blend then cook over med low heat to cook the flour into the mixture (most recipes don't tell you that part but a visiting 5* chef said to do it.) It will become smooth and bubbly but about 3 minutes should do it. Remove pan from heat and stir in 2 cups of milk and less than 1/4 cup white drinking wine (if you wouldn't serve it in a glass- don't cook with it.) (Mom said use a wooden spoon to make this but I use higher heat and a whisk, cuts the time from 1/2 hour to make the sauce to 15 min max.) Return pan to heat (if using a wooden spoon, use med low heat- If using a whisk I use med. heat.) STIRRING CONSTANTLY until boiling or thickened, reduce heat and stir for 1 minute. Remove from heat. If the white sauce is too thick, add some milk to thin it.
I use light coating of Crisco spray on 8x8 glass dish. put drained noodles in pan, top with chicken, mushrooms (if you like), using two spoons, gently toss to mix. Pour white sauce over mixture, again, using spoons gently get the sauce in to make sure that noodles wont be dry. Top with the shredded Italian blend of cheese. (Mozzarella is not acceptable instead of the blend) For this size dish, cook about 40 minutes at 350 degrees. |

Notes: Currently, I can't find mom's recipe from her stuff. This is how over the phone she told me to make it and I have been doing so for ages. Most importantly she told me is how to make a "white sauce" This is the sauce used in Cream ChickBeef- SOS, Scalloped Potatoes, and so on. I will add that recipe also. I use an 8x8 glass dish to make this . Recipe serves 4, increase in portions to suite your needs. Recently I have found that topping with "Italian blend" shredded cheese makes this normally dry top layer- the best part of the meal. This serves 4 so do your math to enlarge the recipe. I use an 8x8 glass dish. I made the medium white sauce.
