1 ½ cups sugar
¼ cup cornstarch
¼ tsp. salt
1 ½ cups cold water
4 egg yolks, lightly beaten
2 tsp. grated lemon peel
½ cup fresh lemon juice
2 Tbsp. butter

Directions:
Directions:
In small saucepan, combine sugar, cornstarch and salt. Gradually add water and whisk until well blended. Whisk in eggs yolks, lemon peel, and lemon juice. Cook over medium heat, whisking constantly, until thick and bubbly. Continue beating 1 minute; remove from heat. Stir in butter. Cool to room temperature without stirring. Chill before filling layers.
