1 lb. ground beef
1 onion, chopped
1 jalapeño pepper, seeded, finely chopped
1 (15 oz.) can enchilada sauce
1 (15 oz.) can black beans, drained
1 tsp. garlic
1 tsp. ground cumin
1 (8.5 oz.) package cornbread mix
1 (8 oz.) mexican style shredded cheese

Directions:
Directions:
Preheat oven to 350º.
Brown meat with onions and peppers in large skillet. Stir in next 4 ingredients; cook and stir 3 minutes or until heated through. Spoon into 9 X 13 baking dish. Prepare muffin mix as directed on package; stir in cheese. Spread over meat mixture. Bake 20 minutes or until toothpick comes out clean. Cool slightly.
