2 T. butter or margarine
1 c. chopped fresh mushrooms
1/2 c. finely chopped celery
1/2 c. finely chopped green onion
6 large eggs
1 1/2 c. half & half
1/4 c. all-purpose flour
1 tsp. paprika
1/2 tsp. season salt
1/2 tsp. hot sauce
1 c. finely chopped cooked ham
3 T. dry white wine
4 oz. shredded swiss cheese
4 oz. shredded cheddar cheese

Directions:
Melt butter in large skillet. Add mushrooms, celery and onions and cook over medium-high heat, stirring constantly, for 2 minutes or until tender. Set aside. Beat eggs and half & half at medium speed until blended. Add flour, paprika and salt. Mix well. Stir in vegetable mixture, hot sauce, ham, wine and cheeses. Pour into greased 10-inch quiche dish. Bake at 350º for 50 minutes until knife inserted in center comes out clean. Let stand 10 minutes before serving.
