Preheat the oven to 375F. Using a sharp serrated knife and some italian chestnuts find the flat side to the chestnut and place on cutting board. Cut the top side of chestnut in an X pattern. Make sure the cut is deep enought to open the nut. Bake for 30 minutes. The beauty here is that there is no wrong way to make these. You can use 400 or 425F just cut the baking time accordingly.

I always wondered if I could eat the chestnuts that are so abundant in Victoria, the answer is no! The edible american chestnut tree was wiped out a few decades back due to disease. Look at the green outer shell if spiky then it is poisonous and if furry, happy baking. Great images on google. Thinking a chestnut farm would be a great retirement job for me! No cholesterol and low cal, Angela and I eat them by the dozen when they're in season (fall/winter/over the holidays).
