2 1/2 cups frozen corn
1 medium tomato, chopped
1/4 cup chopped red onion
1/4 cup white wine vinegar
1/2 teaspoon salt
2 small avocados, chopped
1 Jalapeņo pepper, seeded
1/4 cup chopped bell pepper
1/4 cup fresh cilantro
2 tablespoon lime juice

Directions:

Combine all ingredients except for avocado. Gently stir in avocado. Chill at least 2 hours. Serve with tortilla chips, grilled fish, or chicken. Makes 6 cups.
