2 1/4 c. warm water
1/2 c. sugar
1 beaten egg
1/4 c. shortening (soft)
1 1/2 tsp. salt
1 package dry yeast
7 - 7 1/2 c. flour

Directions:
In large mixing bowl (5 quart) mix together all but flour ingredients. Stir in 2 1/2-3 c. of flour and beat 2 minutes by hand. Add remaining flour. Cover and let rise until doubled. Punch down. May shape into rolls or loaves now or refrigerate overnight. If refrigerated, remove from frig about 6 hours before expecting to bake. Let rise until double. Bake at 375º for 20 minutes
for rolls and 25 minutes for loaves.

Your bowl should have a lid so you can seal it. I use the large Tupperware bowl or invert my cake keeper and use it. I also usually turn on my oven to
warm it for a couple of minutes at its lowest temperature. Then turn it off so when you put the bowl in it won't melt. I have found using closer to the 7 cups of flour then 7 1/2 c. will give me better rising. When you go to shape the rolls, they will be extremely sticky and you will need to flour the counter and kind of roll the dough in it. Spread melted butter on the tops and cover with a damp towel to let rise before baking.

After multiple attempts and failures my childhood friend gave me her Aunts' recipe. I was thrilled when my first try produced dinner rolls I was proud to serve, and have been making since.
