1 cup sugar
3 tbsp cornstarch
1/4 tsp salt
2 cups milk (1%, 2% or whole, or evaporated milk diluted with water
1 oz unsweetened chocolate
3 slightly beaten egg yolks
2 tbsp butter
1 tsp vanilla

Directions:
Directions:
Mix sugar, cornstarch, and salt. Gradually add it to the milk and chocolate, stirring constantly. Cook until hot and bubbly. (I do this in the microwave at 1-2 minute intervals. This eliminates scorching that can happen if you use the stovetop. Be sure to avoid boil overs by using a large enough bowl.) Stir a moderate amount of hot mixture into the egg yolks, then return it to the hot mixture. Bring back to a boil, and cook for a few more minutes. Add the butter and vanilla and mix well. Pour into pre-baked pie shell. Top with meringue (recipe in "Sweets" category as well) and bake at 350º for 12-15 minutes. Or cool and top with Cool Whip.
