1 1/2 cups sugar
3 tbsp cornstarch
3 tbsp flour
dash salt
1 1/2 cups hot water
3 egg yolks, slightly beaten
2 tbsp butter
1/3 cup lemon juice (1/4 tsp lemon extract, if desired)

Directions:
Directions:
Mix sugar, cornstarch, flour and salt. Gradually add it to the hot water, stirring constantly. Cook and stir until mixture comes to a boil. Cook for a while longer. (I do this in the microwave at 1-2 minute intervals. This eliminates scorching that can happen if you use the stovetop. Be sure to avoid boil overs by using a large enough bowl.) Stir a moderate amount of hot mixture into the egg yolks, then return it to the hot mixture. Bring back to a boil, and cook for a few more minutes. Add the butter and lemon juice and mix well. Pour into pre-baked pie shell. Top with meringue (recipe in "Sweets" category as well) and bake at 350º for 12-15 minutes.
