5 lbs chicken breasts
½ cup butter
2 tsp salt
½ cup sherry or white wine
1 cup flour
¼ tsp pepper
4 cup lukewarm stock
¼ cup Parmesan cheese
1 sm jar pimento
Garlic clove

Directions:
Directions:
Cook chicken breasts in 4 or 5 cups water with fixings. Debone. Melt butter and enough flour to make a paste. Add stock ½ cup at a time (stirring constantly over low heat) mix in other dry ingredients. Stir well. Add wine and cook over medium heat stirring constantly until thick – sauté one finely chopped garlic clove in butter and juice from mushrooms. Place mushroom mix in bottom of dish. Pour ¼ sauce on top of that. Add all chicken and rest of sauce. Place crouton on top (strips of white bread, crust removed, dipped in butter) Bake 350º for 45 minutes.
