1 lb ground beef
1 onion, chopped
1 small bag frozen corn
1 can kidney beans
1 can Rotel tomatoes
1 can diced tomatoes
1 lb velveeta cheese
32 oz chicken broth
salt, pepper, chili powder, cayenne, garlic, cumin

Directions:
Directions:
Brown ground beef with onion. Put in crock pot. Add corn, beans, Rotel, tomatoes. Season to taste with salt, pepper, chili powder, cayenne pepper,garlic powder and cumin. Cook for 4-6 hours on low. Slice velveeta in thick slices and add to soup. Allow to melt, stirring well. Serve with cornbread.

Note: To make a thicker stew, reduce or eliminate the chicken broth. You can also use additional Velveeta to make it cheesier. Substitute a second can of Rotel for the canned tomatoes if you like it a bit spicier. You can make this on the stove top too. Combine everything in large soup pot, simmer for 30 - 45 minutes. Remove from heat before adding cheese.
