2 c. cranberries
1 c. sugar
1 T. plus 1 t. lemon juice
1/2 t. lemon rind
1/4 c. Amaretto
1 T. orange marmalade



Directions:
Directions:
Combine cranberries, sugar, and lemon juice in a saucepan. Cook over medium heat, stirring constantly, until mixture comes to a boil. Reduce heat and simmer 20 minutes. Remove from heat. Add lemon rind, Amaretto, and marmalade and stir until blended. Cool to room temperature. Serve over cream cheese with crackers or as an accompaniment to ham, turkey, or pork.

I store the chutney in small glass jars. It will keep for quite a while. After I open a jar, I keep it refrigerated.
