Ingredients: 1/2 pound fresh shiitake mushrooms 1 tablespoon olive oil 2 cloves of garlic, minced 1 teaspoon of dried thyme 1/2 teaspoon freshly ground pepper 4 (5 to 6 ounce) beef tenderlion steaks (1 to 1 1/2 inches thick) 2 shallots, finely chopped 2 cloves garlic, minced 1 cup of Madeira wine 1/2 cup condensed beef broth, undiluted 1/4 cup whipping cream
Garnishes: cherry tomatoes, fresh herbs

Directions:Remove stems from mushrooms, discarding stems. Cut mushroom caps into thin slices.
Combine oil and next 3 ingredients: Coat steaks with mixture. Place in large nonstick skillet over mediuim high, heat until hot; add steaks and cook 12 minutes or to desired doneness, turning once. Remove steaks from skillet , reserving drippings in skillet. Keep steaks warm.
Cook shallot and garlic in drippings stirring constantly until tender. Add Madeira; bring to a boil. Reduce heat, and simmer 10 minutes or until reduced to 1/2 cup.
Add broth and mushrooms; cook 3 minutes or until tender, stirring often. Remove from heat. Stir in whipping creamn; spoon some of sauce onto serving plates. Add steaks.
Garnish if desired. Serve hot. |

Notes: This is very good and rich recipe. Takes a few minutes to prepare but is well worth it. Serve with mashed potatoes or rice with some of sauce poured over them.
